What to check when buying a cooking thermometer

• Instant-read or leave-in. Instant-read probes are for spot checks and give a reading in seconds; leave-in probes stay in the food through the cook and report to a base or a phone. They solve different problems and many people end up owning both.
• Accuracy, stated with a tolerance. A figure like ±0.5°C means something; "highly accurate" does not. Check whether the unit can be calibrated, since drift happens.
• Response time on an instant-read — the difference between two seconds and ten is the difference between checking a steak and losing heat from the oven.
• Maximum temperature rating of both probe and cable, particularly for grilling and smoking.
• Wireless range, and whether it is real. Quoted ranges are line-of-sight figures. Walls, a closed oven door and a metal grill lid all cut it. If the range matters, look for how it behaves through obstructions.
• Water resistance. Probes get washed. An IP rating tells you whether that is safe.
• Battery type. Rechargeable is convenient; replaceable coin cells never leave you waiting.
• App dependence. If the unit needs an app for basic functions, its usefulness is tied to that app continuing to exist and be updated.

Whatever you buy, use it against published safe internal temperatures for the food in question rather than by colour — colour is not a reliable indicator of doneness.
