What to check when buying a countertop cooking appliance

• Usable capacity, not stated capacity. The figure on the box is the whole chamber; what matters is the basket or tray area, because food needs space around it to cook evenly.
• Footprint and the height needed above it. These appliances vent hot air upwards, so they cannot sit under a low wall cupboard.
• Wattage, which drives preheat and recovery time.
• Materials in contact with food. Glass and stainless are easy to inspect and do not wear; non-stick coatings are easier to clean and are consumable — they scratch and eventually need replacing.
• How it cleans. Removable, dishwasher-safe parts are the difference between an appliance used weekly and one left in a cupboard.
• Noise. Fan-driven appliances are louder than people expect in an open-plan kitchen.
• Whether accessories and replacement baskets are sold separately, which decides whether a damaged part means a repair or a new appliance.
• Controls. Presets are convenient; a plain time-and-temperature dial is easier to live with and has less to fail.
